Not Your Mother’s Slaw

For What To Eat Wednesday I have another great recipe from Smitten Kitten: Cabbage and Lime Salad with Roasted Peanuts.

What I love about this recipe is it takes something I really don’t like (cole slaw) and makes it clean, healthy and YUMMY. I’ll be honest, cole slaw has always creeped me out a bit. I mean, it tends to be all runny and soupy. You put a pile on your plate and it starts to kinda leak milky/yellow/mayo all over the plate. Gross!

But, recently I’ve taken a liking to non-traditional slaws. You can pack ’em with healthy ingredients and dress ’em without the milk/mayo goop. So much better for you and no slaw leakage on your plate. The main ingredient in slaw is cabbage and most of us probably don’t get much cabbage in our diets. It is so much better than most of the lettuces, as it’s packed with vitamins/minerals. Also, it’s great roughage for ya (you know what I mean!) Plus, you can eat a TON of cabbage for very few calories. A whole head, yes, an entire head, has only 215 calories.

The only adjustment I would make to this recipe to make it a bit cleaner is sub olive oil for the peanut oil. Shouldn’t dramatically change the taste, but will give you the great benefits of heart healthy olive oil. Ok, here’s the link to your next super healthy, happy non-mayo-leaking salad!

My husband Aaron is addicted to this recipe. We actually just used it as a topping for our taco night, sans the corn. Cabbage is really amazing and loaded with phytochemicals that help fight against cancer. What’s more, raw cabbage is also very detoxifying and improves digestion. So as you can see so many reasons to love raw cabbage.
