I’ve been unfaithful. It’s actually been going on for awhile now. I figured I should come clean, as some of you were on to my secret. Honestly, it was just getting to be too much to hide it all the time. I mean, when it’s true love, you just want to shout it out to the world.

So, I’ll just come out and say it. I know I’m going to hurt some of those who used to be really close to me (brown rice, pasta, potatoes, oatmeal.) Just know it’s not you, it’s me. . . Wait, actually it is you – you’re too low protein, low fiber, low nutrient…. I’m not trying to make you feel back or anything. I just really have to take care of myself right now. I hope you understand.

Here I am to shout from the rooftops….. I LOVE QUINOA!!!

I can’t keep it to myself any longer. I’m buying the Costco bags now, so my secret is out. I may as well be honest with myself and all of you. There is no turning back. I’ve traded my low protein/high carb grains for these teeny, tiny seeds that have TWICE the protein per serving.

I have a whole series of quinoa recipes to share with you. Today I’m going to share one that you will want to to try this week. All really yummy, clean ingredients:

Yes, one of the MANY perks of quinoa is that it’s gluten free. And filling. And yummy. And versatile. And high in fiber. And high in Protein. And fast cooking. The list really goes on and on…

If you’re unfamiliar with quinoa, you MUST try it. You can find it in the bulk section of your store on in boxes in the pasta-ish aisle.

Love this recipe. If you are not a maple flavor person, use a bit of good basalmic vinegar. Yum. As you say, adding quinoa to supplement the ‘healthy’ stuff ( from breakfast cereals to diiner salad) gives it just a little more zing.
