The Loneliest Vegetable

This week on Fit Healthy Moms we are going to advocate on behalf of cauliflower, one of the loneliest vegetables.  You may be cringing by now, but hear us out.  Did you know that cauliflower, along with many other cruciferous vegetables, (broccoli, brussels sprouts, bok choy, kale, and cabbage) could help lower your risk of cancer?  According to The American Institute for Cancer Research, cruciferous vegetables are among the top cancer fighting foods.  To learn more about these studies, simply click here, here, and here.

Cruciferous vegetables, such as cauliflower, have it all.  Not only are they high in fiber, loaded with vitamins and disease-fighting phytochemicals (chemical compounds that occur in plants), they are endlessly adaptable when it comes to incorporating them into our diets.

Aside from helping us prevent cancer, cauliflower leads the pack with its fiber content.  With nearly 12 grams of fiber per cup, there is no better choice when it comes to our digestive health.  Think of cauliflower as little brooms that help our bodies eliminate toxins.  Cauliflower is also an excellent source of vitamin K, vitamin C, manganese, beta-carotene.  The list of cauliflowers nutritional benefits just goes on and on.  To learn more about this amazing veggie, just click here.
