For What-To-Eat Wednesday we are revisiting some classic treats and giving them a much-needed makeover.
We’re going to break away from the buttery indulgence that comes with baking and try something new. Remember our friend Heidi Swanson from 101 Cookbooks? We profiled some of her cauliflower recipes last week. Heidi is going to indulge our sweet tooth with this Peanut Butter Cookie recipe.
Baking with kids is so much fun (once you get over the flour coated kitchen…), so grab your little folks and make it a family affair. This recipe is egg-free, so your kids can lick the bowls clean without worrying about raw eggs. Oh, and did we mention that there is also no added sugar?
One of the reasons we love Heidi so much at Fit Healthy Moms is because she believes in eating and cooking with 100% whole foods. Take her peanut butter cookies. Heidi uses whole-wheat flour or spelt flour instead of white processed flour. The sweetness is derived from natural sugars instead of white processed sugar. Molasses and peanut butter create all the sweetness you need. So head on over to Heidi’s blog and whip these badboys up.
You’ve earned this little treat.
